A LITTLE HISTORY

Compared to other varieties, the San Marzano tomato is thinner and pointier. The flesh is much thicker with fewer seeds, and the flavor is stronger, sweeter, and less acidic. San Marzano vines are indeterminate and have a slightly longer season than other paste tomato varieties, making them particularly suited to warmer climates. As with heirloom plants, San Marzano is an open-pollinated variety that reproduces faithfully from generation to generation, making seed saving convenient for the home gardener or farmer.

This indeterminate heirloom is a monster producer that continues until the first frost. The plum-shaped fruits measure 170 grams, with thin skin and very fleshy flesh, few seeds. Indeterminate variety San Marzano is perhaps the most famous tomato variety on the planet, thanks to its long history of cultivation around Naples, Italy, and its use in sauces.

HOW TO COOK?

Here are some traditional recipes for cooking San Marzano tomatoes:

  • 1. Traditional tomato sauce
    Ingredients: San Marzano tomatoes, garlic, olive oil, basil, salt, pepper.
    Preparation :
    Peel the tomatoes by plunging them into boiling water for 1 minute, then into cold water. Peel and chop them.
    Heat the olive oil in a saucepan, add the minced garlic and brown it.
    Add the peeled tomatoes, salt, pepper and simmer for 30-40 minutes.
    Stir in the fresh basil at the end.
  • 2. Pasta with San Marzano sauce
    Ingredients: Pasta (spaghetti or rigatoni), prepared tomato sauce, parmesan, basil.
    Preparation :
    Cook the pasta according to the instructions.
    Mix the cooked pasta with the San Marzano sauce.
    Serve with grated Parmesan cheese and fresh basil.
  • 3. Tomato Bruschetta
    Ingredients: Bread, San Marzano tomatoes, garlic, basil, olive oil, salt.
    Preparation :
    Toast some slices of bread.
    Chop the tomatoes, garlic, and basil. Mix with olive oil and salt.
    Spread the mixture on the toast and serve.
  • 4. Ratatouille
    Ingredients: San Marzano tomatoes, zucchini, eggplant, peppers, onion, herbs of Provence.
    Preparation :
    Dice all the vegetables.
    Brown the onion in olive oil, add the other vegetables and cook over low heat.
    Add the chopped tomatoes and season with herbes de Provence. Simmer until the vegetables are tender.
  • 5. Pizza Margherita
    Ingredients: Pizza dough, San Marzano sauce, mozzarella, basil.
    Preparation :
    Roll out the pizza dough and spread the San Marzano sauce on top.
    Add slices of mozzarella.
    Bake at a high temperature (around 250°C) until the crust is golden brown. Add fresh basil as soon as it comes out of the oven.

HOW TO GROW?

Our seeds are vigorous, open-pollinated and adapted to the Quebec climate.

  • Species: Solanum lycopersicum
  • Sowing: sow in pots in mid-February (to grow in an outdoor greenhouse in mid-May) or sow in mid-March in an indoor pot to grow outdoors in June, needs a support and does not like the cold
  • Seeds: 2 seeds per pot, as you will have to transplant each seed into separate pots.
