Traditional Algerian Recipes with Grey Zucchini

  • 1. Zucchini Tajine
    Ingredients :

Grey zucchini (cut into slices)
Meat (lamb or chicken)
Onions (chopped)
Tomatoes (peeled and crushed)
Spices (cumin, paprika, salt, pepper)
Olive oil
Chickpeas (optional)
Preparation :

In a large saucepan, heat the olive oil. Add the onions and sauté until golden brown.
Add the meat and brown on all sides.
Stir in tomatoes, spices and chickpeas. Add a little water to cover.
Let simmer for about 30 minutes.
Add the zucchini slices and continue cooking for 20 minutes, until the vegetables are tender.
Serve hot with bread or couscous.

  • 2. Stuffed Zucchini
    Ingredients :

Grey zucchini (cut in half and cored)
Minced meat (lamb or beef)
Rice (precooked)
Onions (chopped)
Spices (cinnamon, salt, pepper)
Tomato sauce
Preparation :

In a pan, brown the onions, then add the minced meat. Season with spices.
Add the precooked rice and mix well.
Fill the hollowed out zucchini with this mixture.
Arrange them in a dish, add a little tomato sauce on top.
Cover the dish and bake at 180°C (350°F) for about 30 minutes.

Couscous semolina
Grey zucchini (cut into pieces)

Our seeds are vigorous, open-pollinated and adapted to the Quebec climate.

  • Species: Cucurbita pepo
  • Sowing: Early April (under cover, outdoor greenhouse) or early May indoors
  • Seeds: 2 seeds per pot, beginning of May and put the plants in the ground at the end of May, beginning of June
    The pots will be ready to put in the ground at the beginning of June.
