How do we cook?

Traditional Recipes with Black Beauty Eggplant

  • 1. Baba Ganoush Ingredients:

2 Black Beauty eggplants 2 tablespoons tahini 2 tablespoons lemon juice 2 garlic cloves, crushed Olive oil Salt and pepper Parsley for garnish Preparation: Preheat the oven at 200°C. Prick the eggplants with a fork and roast them in the oven for about 30-40 minutes, until tender. Let cool, then remove the skin. In a blender, combine the eggplant flesh, tahini, lemon juice, garlic, salt and pepper. Blend until smooth. Serve with a drizzle of olive oil and garnish with parsley.

  • 2. Stuffed Eggplants Ingredients:

2 Black Beauty eggplants, cut in half and cored 300 g minced meat (lamb or beef) 1 onion, chopped 2 tomatoes, crushed 1 teaspoon paprika Olive oil Salt and pepper Feta cheese (optional) Preparation: Preheat the oven to 180°C. In a pan, brown the onion in olive oil until golden brown. Add the ground meat and cook until cooked through. Add the tomatoes, paprika, salt and pepper. Fill the eggplant halves with the mixture. Place them in a baking dish, add a little water to the bottom and bake for 30 minutes. Add feta cheese on top for the last 5 minutes if desired.

  • 3. Caponata Ingredients:

2 Black Beauty eggplants, diced 1 onion, chopped 2 stalks celery, chopped 2 tomatoes, crushed 50 g capers 50 g green olives 3 tablespoons balsamic vinegar Olive oil Sugar (optional) Salt and pepper Preparation: In a large frying pan, heat the olive oil. Add the eggplants and cook until golden brown. Add the onion and celery, and sauté until soft. Add the tomatoes, capers, olives, vinegar, sugar, salt and pepper. Let simmer for 20 minutes. How do we cultivate?

Our seeds are vigorous, open-pollinated and adapted to the Quebec climate

  • Sowing: sow in a pot in mid-February (to grow in an outdoor greenhouse in mid-May) or sow at the beginning of March in an indoor pot to grow outdoors in June does not like the cold
