Traditional Recipes with Black Beauty Eggplant
- 1. Baba Ganoush
Ingredients :
2 Black Beauty eggplants
2 tablespoons tahini
2 tablespoons lemon juice
2 cloves garlic, crushed
Olive oil
Salt and pepper
Parsley for garnish
Preparation :
Preheat the oven to 200°C.
Prick the eggplants with a fork and roast in the oven for about 30-40 minutes, until tender.
Let cool, then remove the skin.
In a blender, combine eggplant flesh, tahini, lemon juice, garlic, salt and pepper. Blend until smooth.
Serve with a drizzle of olive oil and garnish with parsley.
- 2. Stuffed Eggplants
Ingredients :
2 Black Beauty eggplants, halved and cored
300 g minced meat (lamb or beef)
1 onion, chopped
2 tomatoes, crushed
1 teaspoon paprika
Olive oil
Salt and pepper
Feta cheese (optional)
Preparation :
Preheat the oven to 180°C.
In a frying pan, brown the onion in olive oil until golden.
Add the ground meat and cook until cooked through. Stir in the tomatoes, paprika, salt and pepper.
Fill the eggplant halves with the mixture.
Place them in a baking dish, add a little water to the bottom and bake for 30 minutes.
Add feta cheese on top during the last 5 minutes if desired.
- 3. Caponata
Ingredients :
2 Black Beauty eggplants, diced
1 onion, chopped
2 stalks celery, chopped
2 tomatoes, crushed
50 g capers
50 g green olives
3 tablespoons balsamic vinegar
Olive oil
Sugar (optional)
Salt and pepper
Preparation :
In a large skillet, heat the olive oil. Add the eggplant and cook until golden brown.
Add the onion and celery, and sauté until tender.
Stir in tomatoes, capers, olives, vinegar, sugar, salt and pepper. Simmer for 20 minutes.
Serve warm or at room temperature, ideal as an antipasto.

Seed - How do we grow it?
Our seeds are vigorous, open-pollinated and adapted to the Quebec climate.
- Sowing: sow in a pot in mid-February (to grow in an outdoor greenhouse in mid-May) or sow at the beginning of March in an indoor pot to grow outdoors in June, does not like the cold
- Seeds: 2 seeds per pot, as you will have to transplant each seed into separate pots.
- Species: Solanum melongena Eggplant Brinjal, or Melongene, Brinjal or Guinea
